Combine first four ingredients and apply to flesh side of salmon. Let sit for 15 minutes. Sprinkle with salt and pepper. Grill flesh side down over modertate heat until nicely colored (4-5 minutes.) Turn and cook until done (3-4 additional minutes.)
*For even more flavor, place skin side down on a soaked cedar grilling plank and grill over high heat (without turning) until done.
Serve with mango salsa and grilled vegeatbles.
2 ripe mangoes, peeled pitted, and coarsely chopped
2 tablespoons red onion, chopped fine
2 tablespoons green onion tops, chopped
1/2 large jalapeno, minced
2 tablespoons honey
1/4 cup apple cider, reduced to 2 tablespoons
1 tablespoon lime juice, or to taste
2 tablespoons cilantro, chopped
1 teaspoon fresh ginger, finely shredded
salt, to taste
Combine ingredients and hold refrigerated for at least an hour to allow flavors to marry. Can be made a day in advance.
